Fresh Garden Greens with Raspberry-Orange Vinaigrette
A delightful combination of crisp leafy greens and fresh summer fruit sets the garden salad apart from the rest. Serve as a light, yet satisfying, main dish or a refreshing first course.
1-10 oz. package Topless Salad Quickies™ Gourmet Baby Spinach**
1-6 oz. package Topless Salad Quickies™ Spring Mix
2 fresh oranges, peeled and chopped into bite-size pieces
½ cup sliced almonds, toasted if desired
1 cup fresh raspberries
1/3 cup olive oil
3 T raspberry vinegar
1 T plus 1 tsp. sugar
1 clove garlic, peeled and crushed
1/3 cup fresh orange juice
Salt and pepper to taste
Lightly rinse the spinach and spring mix to crisp and place in a large salad bowl. Add orange pieces and almonds; toss lightly. Combine dressing ingredients, using a wire whisk, until well blended. Just before serving, pour dressing over salad and toss until leaves are well coated. Add the fresh raspberries; toss gently. Yields 6 to 8 generous servings.
